Club sandwich

HINT: This also tastes great when toasted bread is used

8 thick slices wholemeal bread, toasted
4 thick slices rye bread, toasted
3 tablespoons low-fat mayonnaise
8 baby cos lettuce leaves
150 g barbecued chicken (white meat only), or shaved strips of cooked low-fat turkey breast
4 slices reduced-fat cheese
1 large tomato, sliced
50 g shaved reduced-fat ham
1 Lebanese cucumber, cut into very thin strips lengthways

Trim crust off bread.  Lightly spread with mayonnaise.  To assemble, place lettuce leaves on wholemeal bread slices, top with chicken, followed by a slice of rye bread, cheese, tomato, ham and cucumber.  Finish with wholemeal bread.
